I used to be part of the Welsh Water Marine Survey Team many, many years ago and did a number of offshore surveys and also walked the wonderful Anglesey Coastal Path, but never a fishing trip around the area you are discussing.
To answer your question, I would either suggest that you contact the fishing and nature trip boat company whose services you enjoyed so much last time. I would also suggest that you contact that you copy the next link into your browser and either make a note of the companies and contact them.
